The grape varieties: Syrah, Grenache, Mourvèdre, Carignan and Cinsault.
The vineyard: a balcony (culminating at 600m) lying against the Cévennes mountains, which dominates the Languedoc Plain, with the sea in the distance. An area covering 2,000 hectares situated north of Béziers.
The wines: Faugères is a rounded wine, with silky tannins and delicate aromas of ripe fruit and liquorice. With time, it reveals suave bouquets with notes of leather and gun flint. Meat and poultry will find a generous and subtle companion in Faugères. But the supreme taste of this exclusively schistose land will be revealed with a cut of beef or with game.

AOC SAINT CHINIAN
The grape varieties: Syrah, black Grenache, Mourvèdre, Lladoner Pelut, Carignan and Cinsault.
The vineyard: is at the foot of the Montagne Noire, on both sides of the Orb and the Vernazobres, with, in the background, the Monts du Caroux and Espinouse, where twenty villages have combined to produce Saint- Chinian. The vineyard covers 2,700 hectares. A colourful environment and a rustic and warm setting.
The wines: sometimes fruity, supple and generous, sometimes full-bodied, long in the mouth and distinctive, some Saint- Chinian wines find their fulfilment when young whereas others have to wait 3 to 5 years. In this region of hunters, it is a pleasure to dream of winter, when game is cooked on the spit in large fireplaces and the powerful wines reveal their sparkling ruby robe and aroma of red fruits and cistus (small shrubs with delicate white or pink flowers).

AOC MINERVOIS
The grape varieties: Mourvèdre and Syrah, Carignan and Cinsault for red and rose wines. There are many varieties for white wines: Grenache, Clairette, Bourboulenc, Marsanne, Roussanne, Maccabeu, Rolle and Muscat.
The vineyard: located in a triangle bordered by Carcassonne, Narbonne and Béziers, the vineyard stretches from terrace to terrace over 18,000 hectares, 5,000 of which are under production.
The wines: the east of Minervois offers structured wines with a blackcurrant shade of red; the centre has distinctive and supple red wines and refreshing whites with floral aromas. To the west, the reds are bright and aromatic and the whites are drier. Higher up, the reds are more full-bodied, whereas the whites are inspired with the perfume of heather. Saint Jean de Minervois is the land of Muscat, a subtle and fruity natural sweet wine.

AOC COTEAUX DU LANGUEDOC
The grape varieties: Syrah is the dominant variety for red wines, combined with traditional Mediterranean grapes such as Grenache, Carignan, Cinsault, and increasingly, Mourvèdre. The white varieties are Marsanne, Roussanne, white Grenache, Rolle, Bourboulenc, Picquepoul and Clairette.
The vineyard: covering more than 6,700 hectares between Nîmes and Narbonne, it is the most coastal area of winegrowing land in Languedoc, even though here it is possible to find almost hidden territories lying opposite the Cévennes mountains. Its wines are called either the vintage names (Saint- Chinian, Faugères or Clairette du Languedoc) or take the name of Coteaux du Languedoc, either used on its own or followed by the name of the territory.
The wines: each territory has its own very strong identity, but all these wines offer perfumes of the garrigue and a sensation of suppleness and freshness which are an invitation to a gentle way of life.

TERRASSES DE BEZIERS (REQUEST FOR AN AOC IN PROGRESS)
The grape varieties: Syrah is the dominant variety for red wines, combined with traditional Mediterranean grapes such as Grenache, Carignan, Cinsault, and increasingly, Mourvèdre. The white wine varieties are Marsanne, Roussanne, white Grenache, Rolle, Bourboulenc, Picquepoul and Clairette.
Production area: Cazouls-les-Béziers, Béziers, Nissan-lez-Enserune, Vendres, Sauvian, Sérignan. Surface area: 340 ha. Lying in the southern part of Hérault, the Terrasses de Béziers vineyards are slightly hilly, but mainly lie in the plain. The climate is generally arid. Along the Orb river, it is possible to distinguish the terraces and the sandy marl often combined with brown limestone soil. Climate: very hot.

COOPERATIVE : LES CAVES DE BEZIERS
Béziers, the capital of Wine, created its own cooperative winery in 1947, which collects, transforms and ages the different appellation wines which are bottled in the storehouse and sold at the shop. Since then, the two cooperative wineries of BEZIERS BOUJAN have merged to become Les Caves de Béziers, with a production potential covering the two communes where, according to the type of soil, the winemaker has had to plant a specific variety of grape; Merlot, Cabernet Sauvignon, Syrah for the red wines and Sauvignon, Chardonnay and Viognier for the whites, as well as some traditional varieties: Carignan, Grenache.
